Turkey Quiche Recipe

Turkey & Rice Quiche

Yield: 8 Servings

Ingredients

3 c cooked rice, cooled to room
1 temp
1 1/2 c chopped cooked turkey
1 medium tomato, seed & diced
1/4 c sliced green onions
1/4 c finely diced green pepper
1 tb chopped fresh basil or
1 ts dried basil
1/2 ts seasoned salt
1/4 ts ground red pepper
1/2 c skim milk
3 eggs, beated
1 vegetable cooking spray
1/2 c (2 oz) shredded mozzarella

Instructions

1. Combine rice, turkey, tomato, onions, green pepper, basil, salt, red pepper, milk, and eggs in 13x9x2" pan coated with cooking spray. Top with cheeses.

2. Bake at 375F for 20 minutes or until knife inserted near center comes out clean. To serve, cut quiche into 8 squares, cut each square diagonally into 2 triangles.

Spanish Turkey Recipe

Spanish Turkey Sausage

Yield: 1 Servings

Ingredients

2 lb ground raw turkey
2 ts salt
1 clove garlic, finely minced
1/2 ts red pepper flakes
1 ts cumin seeds
2 ts oregano or Italian seasoning
1/4 c dry red wine
1 few drops of liquid smoke seasoning; (optional)

Instructions

Follow recipe directions above. Sixteen patties, about 70 calories each.

Have the trimmed of fat and ground, or grind it yourself. Combine with remaining ingredients and mix lightly. Gently shape into 16 patties. Wrap and freeze, if desire. Broil or barbecue for 2 minutes on each side (3 minutes, if frozen).
