Stuffed Turkey Recipe

Turkey-Stuffed Peppers

Yield: 6 Servings

Ingredients

6 md green bell peppers
1 lb ground turkey
1 c cooked rice
2 tb onion; minced
1 tb worcestershire sauce
1 clove garlic; minced
1/4 ts pepper
1 c low-sodium tomato sauce; 8 oz.
1/2 c ; water
1 oz skim mozzarella cheese; shredded

Instructions

Cut off tops of green peppers; remove seeds and membrane. Mix turkey with rice, onion, Worcestershire sauce, garlic, and pepper. Mix half of tomato sauce with turkey mixture, then spoon mixture into peppers; cover.

Place in microwave and cook 18 to 22 minutes, giving dish quarter-turn every 5 minutes. Add water and remaining tomato sauce.

Sprinkle cheese over each pepper. Recover and return to microwave. Cook 1 to 2 minutes until cheese melts.

To freeze: Place in microwave-safe container; label and freeze for up to 2 months. To serve: Thaw. Cover with microwave-safe plastic wrap, and cook on high 3 to 5 minutes. Makes 6 servings.

Turkey Meatballs Recipe

Gingered Turkey Meatballs

Yield: 34 Appetizers

Ingredients

1 lb ground raw turkey
1/2 c gingersnap crumbs
1/4 c finely chopped onion
2 tb soy sauce; divided
1/2 ts curry powder
1/8 ts pepper
2 tb vegetable oil
1 cn (l0 1/2 ounces) franco-american chicken
1 tb brown sugar
1/2 ts grated fresh ginger

Instructions

1. In medium bowl, thoroughly mix turkey, gingersnap crumbs, onion, 1 tablespoon of the soy sauce, the curry and pepper. Shape into 1-inch meatballs.

2. In 10-inch skillet over medium heat, heat oil until hot. Cook meatballs, a few at a time, until browned on all sides. Remove meatballs as they brown. Spoon off fat. Return all meatballs to skillet.

3. Stir in gravy, sugar, ginger and remaining soy sauce. Heat to boiling. Reduce heat to low. Cover simmer 20 minutes or until meatballs are done, stirring occasionally. Pour into serving bowl; serve with decorative toothpicks.

Turkey Marinade Recipe

Thanksgiving Turkey Marinade

Yield: 1 Marinade

Ingredients

Instructions

Thaw turkey (if frozen) on Monday & Tuesday in refrigerator.

On Wednesday, put 3 onions (cut up), 4 garlic cloves (sliced) and 1 large bunch of parsley in cavity of bird.

Pour Vernors (ginger ale) and 8 oz orange juice concentrate in cavity. Cover and rub bird with Catalina dressing. Sprinkle with seasoned salt and pepper and paprika. I put the whole mess in a garbage bag and marinate it overnight.

Before baking, discard all marinade.

Di Note: When I finally bought my house, I wanted to have Thanksgiving here instead of at my mother's (which was traditional). I had NEVER done a turkey before. I bought this HUGE creature and started to do the marinade thing (my Mom's recipe). Well, I don't have much counter space and this bird was a slipping an' sliding all over the place and I was laughing hysterically. I was actually fighting this monster! My Mom called to see how everything was going and all she could hear was me cackeling. She jumped in her car and came over and here I was, on the floor with this damn bird in my lap and marinade all over me. It was one of those moments...great marinade tho!
