Roasted Turkey Recipe

Herb Roasted Turkey

Yield: 18 Servings

Ingredients

1 c plus 2 tablespoons unsalted butter
2 ts dried rosemary; crumbled
2 ts dried thyme; crumbled
1 18-pound turkey (neck and giblets reserved stock)
1 lg carrot; peeled and thinly sliced
3/4 lb leeks - white and pale green parts; chopped
Kitchen string; for trussing bird
3 c chicken stock

Instructions

Preheat oven to 325 F. Combine butter and half each of the rosemary and thyme in a bowl. Add a generous amount of salt and blend. Season inside of turkey cavity with salt and pepper to taste. Add carrots, leeks and remaining rosemary and thyme to inside cavity. Truss bird with string. Pat skin dry with paper towels. Brush a portion of the herb butter mixture over turkey. Place turkey on a roasting rack inside a roasting pan. Roast turkey about 20 minutes per pound, basting with chicken stock and brushing with herbed butter every 25 minutes until a meat thermometer registers 175 F. when inserted into thickest part of the thigh (or when thigh and leg fall easily away when pulled.) Remove turkey from oven. Reserve fat from cooking juices for mushroom gravy. Discard remaining fat. Reserve cooking juices for mushroom gravy. Let turkey stand 20 minutes before carving.

Turkey Pot Pie Recipe

Easy Turkey Pot Pie

Yield: 4 Servings

Ingredients

1 pk (6 oz) stove top stuffing
1 mix for turkey or chicken
1 1/2 c hot water
1/4 c (1/2 stick), butter or
1 margarine, cut into pieces
2 c cubed cooked turkey
1 jar (12 oz.) chicken gravy
1 pk (10 oz.) frozen mixed
1 vegetables, thawed, drained
1/4 ts dried thyme leaves .

Instructions

MIX contents of vegetable/seasoning packet, hot water and butter in large bowl until butter is melted. Stir in stuffing crumbs just to moisten. Let stand 5 minutes. POUR gravy into 2-quart casserole or 12x8 inch baking dish. Stir in turkey or chicken, vegetables and thyme. Spoon stuffing over turkey mixture.

BAKE at 350F for 45 minutes or until thoroughly heated. Makes 6 servings.

Turkey Sausage Recipe

Turkey Sausage Coucroute

Yield: 4 Servings

Ingredients

1 lb turkey kielbasa sausages
1 chopped onion
1 cn 28 oz, sauerkraut
1/2 c dry white wine
1/4 c chopped sweet pepper

Instructions

Grill the sausages. Combine with remaining ingredients. Simmer uncovered 10 minutes.

Turkey Casserole Recipes

Turkey Casserole

Yield: 4 Servings

Ingredients

1 c white sauce
2 1/2 c turkey, cooked
1 c celery, diced
1 ea green pepper, diced
2 tb olive oil
1 ea garlic clove, crushed
1 1/2 c tomato puree
1/2 c mushrooms, sliced
1/2 ts basil
1 ea chicken bouillon cube
3 c spaghetti, cooked
1 salt
1 pepper

Instructions

Cube cooked turkey. Cook thin spaghetti according to directions. Make white sauce (See Micro Cookbook recipe). In medium saucepan heat oil, add garlic, celery, green pepper,mush- rooms and cook until tender. Add tomato puree, bouillon, basil, salt and pepper to taste, reduce heat and simmer 10 minutes. In casserole dish spread half the white sauce. Add half the spaghetti and tomato mixture plus turkey. Repeat layers. Bake at 350 deg for 30 minutes.
